Ingredients:
- 4 medium zucchinis
- 3 tablespoons Rallis Olive Oil
- 1 cup rice (Arborio or short-grain rice works best)

- ½ cup fresh parsley, chopped
- ½ teaspoon dried oregano

Instructions:
1. Prepare the Zucchini:
- Preheat your oven to 375°F (190°C).
- Wash the zucchinis, then slice off the tops and carefully scoop out the inner flesh using a spoon. Be sure to leave about a ¼-inch thick shell so the zucchinis can hold the filling without falling apart.
- Chop the scooped-out zucchini flesh into small pieces and set aside. Arrange the hollowed zucchini boats in a greased baking dish.
2. Make the Filling:
