Ingredients:

  • 4 medium zucchinis
  • 3 tablespoons Rallis Olive Oil

  • ½ cup fresh parsley, chopped

Instructions:

1. Prepare the Zucchini:
  • Preheat your oven to 375°F (190°C).
  • Wash the zucchinis, then slice off the tops and carefully scoop out the inner flesh using a spoon. Be sure to leave about a ¼-inch thick shell so the zucchinis can hold the filling without falling apart.
  • Chop the scooped-out zucchini flesh into small pieces and set aside. Arrange the hollowed zucchini boats in a greased baking dish.
2. Make the Filling:
  • Heat 3 tablespoons of Rallis Olive Oil in a skillet over medium heat.
  • Add the chopped onion and garlic, sautéing until soft and fragrant, about 3-4 minutes.
  • Stir in the chopped zucchini flesh and cook for another 2-3 minutes until softened.

  • Spoon the rice and vegetable mixture into the hollowed zucchinis, gently pressing the filling in. Don’t overstuff, as the rice will expand during baking.
  • In a small bowl, mix 2 tablespoons of tomato paste with ½ cup water or vegetable broth. Pour this sauce into the baking dish around the zucchinis for extra moisture and flavor.
4. Bake:
  • Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes.
  • Remove the foil and, if desired, sprinkle some grated cheese on top. Bake uncovered for another 10-15 minutes, or until the zucchinis are tender and the tops are golden.
5. Serve:
